Why We Refuse to Compromise: The Story Behind Carson’s Cookie Co.

If you’ve ever turned over a conventional package of cookies or a tub of cookie dough in the grocery store aisle, you’ve probably noticed a frustrating trend. The ingredient list is often a wall of text filled with artificial preservatives, highly processed oils, and heavy sugars that mask the true flavor of the food.

When I started Carson’s Cookie Co., I knew there had to be a better way. I wanted to create a dessert line that I felt genuinely good about eating and sharing—treats that didn't force anyone to choose between their wellness goals and pure, decadent enjoyment.

Driven by a Personal Health Journey

For most of my life, I’ve been a very active, health-conscious person. You can usually find me hitting the gym 3 to 5 days a week, out on the golf course, swimming, or staying moving with sports. But a few years ago, my body threw me a curveball. I started experiencing severe lactose intolerance alongside inflammatory respiratory issues. It felt like my own body was reacting to everything I ate, and I knew something had to change.

As a baker, I started experimenting in my own kitchen to save my love for desserts. It began with my original chocolate chip cookie, which friends absolutely loved. But soon, friends with their own dietary restrictions started asking: "Can you make a version I can actually eat?"

I went to work crafting dairy-free and vegan alternatives. The feedback was staggering. People couldn't believe they were allergen-friendly and kept telling me, "You need to sell these."

Eventually, the idea became an obsession. I knew I could create something fundamentally better, cleaner, and more gourmet than anything else on the market. After a local restaurant owner tasted them and told me I'd be crazy not to go for it, I decided to dive in headfirst.

The Farmer’s Market Hustle & Facing the Unexpected

After nine intense months of dialing in the recipes, perfecting our branding, and navigating the permitting process, Carson’s Cookie Co. went to market.

We officially debuted at the Leucadia Farmers Market in Encinitas. The response from the local community was incredible. Before long, we expanded across San Diego County, setting up booths at the Solana Beach, Del Mar, Cardiff, Little Italy, and North Park farmers markets, alongside various local vegan pop-ups.

But just as we were hitting our stride, disaster struck. A devastating kitchen flood completely wiped out our production space.

In an instant, I lost our physical market presence, my primary income, and was forced to completely stop operations for a couple of months. It was a heartbreaking setback, but it forced me to step back and rethink the entire direction of Carson’s Cookie Co.

A New Chapter: Bringing the Bakery to Your Home Kitchen

During those quiet months of rebuilding, I realized something powerful. The heart of Carson's Cookie Co. began in my home kitchen, experimenting with clean ingredients. Why not give my customers that exact same experience?

We decided to rebrand and pivot our focus toward grocery store shelves, transitioning into premium, clean-label take-home cookie doughs. This allowed us to meet our customers right where they are, giving everyone the ability to bake fresh, gourmet cookies in their own kitchens.

To make this vision a reality, we completely re-engineered the way commercial cookie dough is made:

  • Custom Vegan Butter: For our Gluten-Free and Vegan lineup, we don't rely on highly processed, store-bought oils. We craft our own vegan butter completely from scratch using an organic coconut and avocado oil base. New studies are showing that diets high in seed oils can cause your body to have a more inflammatory response. Seed oils are used heavily in vegan and dairy free items so my goal was to find a way to keep them out of my cookies.

  • Organic Heritage Grains: For our classic recipes like the OG and Cookies & Cream (which feature real organic butter and eggs), we use ancient heritage grains like high alpine wheat products that have not been bioengineered for mass farming practices. These flours are deeply flavorful, retain their natural nutrients, and are much gentler on sensitive digestion.

  • 30% Less Sugar: We balance our recipes using organic cane sugar at reduced levels up to 30% per serving compared to comparable grocery store brands. We want you to taste the premium ingredients, not just pure sugar.
